Party Chicken

  • 2-3 pound chicken cut into pieces
  • flour – seasoned to taste with salt, pepper, onion and garlic powder, and thyme.
  • 3 tbs butter
  • 6 scallions, chopped
  • ½ pound mushrooms
  • 2 tbs lemon juice
  • 1 tsp sugar
  • 1 tsp salt
  • 1/3 cup apple cider (or substitute with apple juice)
  • 2 med ripe tomatoes, diced
  • 2 tbs chopped parsley
  • 2 tbs chopped chives

Coat chicken in flour mix; in a large skillet brown chicken in butter. Add scallions, mushrooms, lemon juice, sugar, salt, apple cider; add diced tomatoes. Cover and cook slowly for 35-45 minutes until fork tender. Sprinkle with parsley and chives.

3-5 servings.
