Party Chicken
- 2-3 pound chicken cut into pieces
- flour – seasoned to taste with salt, pepper, onion and garlic powder, and thyme.
- 3 tbs butter
- 6 scallions, chopped
- ½ pound mushrooms
- 2 tbs lemon juice
- 1 tsp sugar
- 1 tsp salt
- 1/3 cup apple cider (or substitute with apple juice)
- 2 med ripe tomatoes, diced
- 2 tbs chopped parsley
- 2 tbs chopped chives
Coat chicken in flour mix; in a large skillet brown chicken in butter. Add scallions, mushrooms, lemon juice, sugar, salt, apple cider; add diced tomatoes. Cover and cook slowly for 35-45 minutes until fork tender. Sprinkle with parsley and chives.
