Grandpa’s Fried Chicken
- 3 pound whole chicken fryer, cut up
- 1 cup milk
- 1 egg white
- 1 tsp thyme
- 1 tsp garlic powder
- 1 tsp parsley flakes
- 1 tsp paprika (substitute cayenne/Cajun seasoning for spicing)
- 1 tsp black pepper
- 1 tsp salt
- 1 cup flour
- 1 cup breadcrumbs
Mix seasonings with flour and breadcrumbs; in a separate bowl whip together egg white and milk. Dredge chicken parts in milk/egg mix then dredge them through the flour mix making sure all pieces are well coated.
In deep skillet melt vegetable oil (recommend 1 cuo Crisco to ¼ cup butter). Heat skillet on high until oil is hot, but not smoking, then turn to medium, add chicken and cook until golden brown and well done. Usually around 9 – 12 minutes.
Optional: for less fat, can spray pan with non-stick spray and put in preheated 400 degrees oven for around 15 minutes, turning every 15 minutes for even browning.
